10 Minute Jambalaya

Progresso hearty tomato soup1 can
cooked chicken4 oz, cubed
cooked shrimp6 oz, bite size
cooked brown rice3/4 c
garlic1 T
olive oil1 T
hot sauceto taste
thyme1/2 t
cumin1/2 t
cayenne1/2 t
ground clovepinch

  • Prepare rice, chicken and shrimp...for a quick meal I use Success Rice, Perdue Short Cuts and Cocktail Shrimp
  • In bottom of soup pan, saute garlic in olive oil until slightly brown
  • Add tomato soup, hot sauce and spices
  • Heat through
  • Add rice, chicken and shrimp
  • Cook over low heat for 5-10 minutes, stirring frequently and adjusting spices to your taste
Makes 2 servings. Each serving is 4 blocks each of protein, fat and carbohydrate.
